The Aviatrix is a textual and moreish experience made with a gentle hand and a non-interventionist approach. The aromas hint of star jasmine and zesty meyer lemon, the palate has lemon curd and white fleshed nectarine. There is a creamy complexity from time on lees in barrel, coupled with brulee and toffee notes typical of Semillon. Wild fermentation gives this subtle and long lived dry white wine a flint gunsmoke edge. Cellaring will reward the Semillon fan.
